cold water; soluble in hot water and organic solvents. Combustible.
o-Tolyl acetate has a powerful, fruity, medicinal odor that becomes sweet floral on dilution. It has a sweet and fruity
flavor at low levels.
Flavoring. o-Tolyl acetate is (allegedly) used in
Butter, Caramel, Cherry, Honey flavors and
fruit compositions at concentrations from 1 to
10 ppm in the finished product.
